Cotechino is a high quality product typical of Veneto Region; its name comes from „cotica” that in Italian means pig’s rind; it is cooked with a unique process that takes two days: it is called tyndallization, a double cooking at very low temperature; the result is a very elegant and delicate product, the texture and the succulence are irresistible
