Product Description

RAW MATERIAL

Parma pigs must be specially bred Large White, Landrance and Duroc breeds, born and
raised by authorized breeding farms located in 10 regions of central-northern Italy.By law the
pigs are at least nine months old and must weigh a minimum of 140 kgs at the time of
slaughter

APPEARANCE

The texture has to be soft but not loose, delicately red in color when sliced

TASTE

Very sweet, with a strong aroma

MATURING

At least 18 months

Eli prosciutti, founded in 2004 in Treversetolo (PR), produces about 75000 raw ham per year.
It is run by family Dalla Bona, who is involved in the food industry since 1950 producing
Grana Padano and Parmigiano Reggiano
