Il Crutin, che in dialetto langarolo significa piccola cantina, è un formaggio a latte misto, vaccino e caprino, prodotto utilizzando l’antica tecnica cuneese dei formaggi d’alpeggio denominata a pasta rotta, in cucina quindi fonde ma non fila. Alla pasta viene aggiunto del tartufo sminuzzato finemente affinché diffonda uniformemente il suo profumo
